Sausage Bites

This is a little bit of a funny recipe, but I swear, these taste AWESOME. When I was a kid, my mom made these as pass around appetizers for “fancy parties”, and they were totally 70s (as you can see from the original recipe.) When I started working and we would have our annual Christmas party, I sort of craved these and wanted to make them up to bring them in, but I looked at the recipe and was a little horrified (Cheez Whiz? Really?) So, I adapted it so it was made from actual food. And of course, they were even better! A hit for the annual party, and for football games, snacking, etc. Hope you enjoy them.

  • 3 cups Bisquick

    • Remember Bisquick? You can still buy it, but you can mix up your own (with butter, instead of whatever shortening juju is in that stuff, eek.). I’ll do a per cup ratio, so multiply it by 3 for this recipe. (Here’s the recipe from My Baking Addiction, in case you want to keep it on your shelf for all time baking!)

      • 1 cup of flour

      • 1/2 T baking powder

      • 1/2 t salt

      • Cut in about 1 T butter per cup of flour. Using a food processor makes this easier!

  • 1 lb of loose sausage.

    • If you aren’t using NR Foods sausage, or a local farm option, this is like, “tubed” sausage. Wait until you get the good stuff. Really!

  • 1 cup of Cheez Whiz

    • I don’t know if you can find this anymore. Do you want to? I did see Velveta somewhere a few weeks back. Just use a cup of real, actual, shredded cheese, thank you.

  • 1 cup of milk

  1. So, wash your hands and take off your rings, cause this is hand mixing!

  2. Mix the flour mixture into the sausage first, then add the cheese and finally the milk.

  3. Roll them into little balls (about 2 T size-or use a cookie scoop) and place on a parchment lined cookie sheet. This recipe makes about 30-40 balls.

  4. Options: Bake now for 30 min at 425, watch to make sure the bottoms don’t burn. OR Put the cookie sheet in the freezer, allow them to freeze up, and then bag them for baking in small batches during your party. You can put them right from freezer onto baking sheet.
