Joe’s special
A San Francisco classic. This is a quick, satisfying meal we make when it’s dinnertime but nothing has been done!
Ingredients:
Eggs
1 pound of sausage or ground pork
Olive or vegetable oil
Onion
Vegetable (great with spinach or power greens, but just fine with frozen mixed vegetables, corn or peas!)
Sourdough or your favorite bread
Directions:
Slice onion and brown it in a large frying pan with olive oil. Get them nice and carmelized.
Add the meat until browned. If using ground pork, season with salt and pepper, or as desired.
Steam your vegetables in a separate pot, and add them to the pan.
Whisk 4-6 eggs in a bowl and add them to the frying pan, stirring to cook them.
Serve with toasted bread- it’s a meal in minutes! Some like to add a little ketchup or chili sauce.
